Nutrition And Good Meal Ideas For A College Student?

*Please read everything before you answer…Will help me a lot! I have some concerns and I need someone to address all of them…best answer I will give 10 points. Thank you!
I live in an Apartment, and need some ideas for healthy meals that can get the job done. First off my goal is to Cut down fat, build some lean muscles, not bulk, and go from 180 pounds to 160 pounds in about 2 months. I know this sounds crazy but I pretty much workout 6 days a week and recover on Saturdays.
Here are my ideas, I have basic knowledge of Nutrition…Eat about 1400-1600 calories and just water.
Breakfast-Oatmeal
Snack 1-Half of Protein Shake
Gym
Snack2-Finish Protein Shake and Banana
Lunch-I buy rotisserie chicken from couscous take about a cup…and add some Kraft cheese and 2 whole wheat bread, and eat 1 banana
Snack 2-Cup of Nuts, and cup of fruits(banana, apple, and grapes)
*The main problem I have is Dinner…I sometimes eat beans, or anything my mom has made for me that week…like vegetables and rice…I need a good low carb idea…
**I also for a midnight snack like to drink Coffee…I know its a bad idea but i am more awake to do homework for 3 hrs and then I can crash easily when it comes time for me to sleep.
***And Finally i like to have to cheat meals…Usually for dinner or pretty much a dinner/lunch when i wake up late on weekends. On Saturday I like to eat a foot long sub from subway, chips and coke zero, and on Sunday I eat a vegetable burrito with guacamole and sour cream from chipotle, chips and coke zero…I don’t know if this is okay or if it is killing my progress let me know
If you guys have any ideas and suggestions give me some. Thanks in Advance
